Dec 5th 2007 Zucchini Latkes with Garlic-Yogurt Mint Sauce
Sauce:1/2 Cup plain yogurt1 1/2 teaspoons chopped fresh mint1/2 small garlic clove, mincedSalt and pepperMix all ingredients and set aside at room temp.Latkes 3 cups coarsely grated zucchini1 tablespoon chopped garlicKosher salt and freshly ground pepper3 tablespoons all-purpose flour1 large egg, lightly beatenOil for fryingCombine zucchini, garlic, salt and pepper.Add beaten egg and flour, stir until just incorporated.Heat oil in a deep skillet. For each latke, drop 1 heaping tablespoon of the zucchini mixture into the pan. Fry about 2 to 3 minutes per side. Drain on paper towels and serve piping hot with the sauce.Makes about 12 small latkes.
