Dec 5th 2007 Sweet Potato Latkes

1 lb sweet potatoes, peeled3 green onions (scallions) finely chopped2 large eggs, lightly beaten1/2 cup all-purpose flour1 teaspoon kosher or plain salt1/2 teaspoon pepper Oil for fryingSour cream or applesauce to garnish Coarsely grate the sweet potatoes. Mix in the scallions, eggs, flour, salt and pepper. Using a packed 1/4 cup measure of this mix per pancake, with your hands form into 12 firm balls and put on a baking sheet. Flatten the balls to 3/4 inch rounds. Heat the oil in a deep large skillet. Transfer 6 of the rounds into the oil, flatten a bit, and cook until golden brown, usually 4-5 minutes per side. When finished, remove to paper towel lined plate and repeat with the remaining rounds.Serve with sour cream and applesauce.
