Dec 15th 2007 Nut Burgers

Ingredients:

  •  1 medium onion
  • 1 cup walnuts, pecans, almonds, cashews or other nuts, preferably raw
  • 1 cup (raw) rolled oats to cooked short grain white or brown rice
  • 2 tablespoons ketchup, miso, tomato paste, nut butter or  tahini
  • 1 teaspoon chili powder or any spice mix you like
  • Salt & pepper
  • 1 egg
  • 2 tablespoons peanut, olive or other neutral oil

Process:

  1.  Grind onion in food processor. 
  2. Add nuts and oats, pulse to chop but not too finely.
  3. Add remaining ingredients except oil and process briefly – not too finely.
  4. Add a  little liquid if needed (water, stock, soy sauce, wine – whatever) to make mixture moist but not loose.
  5. Let it rest a few minutes then shape into 4 burgers.
  6. Put oil in pan over medium heat. When oil is hot, place burgers in pan. Cook 5 minutes undisturbed. Turn and cook another 3-4 minutes, until firm.
  7. Serve on bun with toppings of your choice.


Note: Burger mixture or shaped burgers may be covered tightly and refrigerated for up to a day. Return to room temp before cooking.
