Nov 26th 2008 Ellen’s Creamy Thanksgiving Potatoes

4 Med. Potatoes
4 Tb Butter
1 tsp flour
1/2 pint heavy cream
Salt/Pepper

Bake Potatoes at 350 till barely tender but still firm, about 40-50 minutes. Cool, peel, and cube.
Melt 2 Tb butter, stir in flour for a few min. and then add cream – stir until cream bubbles and thickens slightly.
Season sauce – pour over the potatoes in a baking dish. Dot top with remaining butter – bake at 350 until hot, about 20-30 minutes. The important thing is that it should be bubbling. I use a potato per person and more than double the sauce for our crowd. The time is spent dicing the potatoes.
